2 eggs
2 scallions, cut into thin strips
1 pound of cooked rice
1/2 cup vegetable oil
2 tsp. salt.
1 tbs. of soy sauce

Directions:
Directions:
1) Place a wok on the stove. Heat up the wok.
2) Put half the oil into the wok.
3) crack eggs into the wok. Stir until it scrambles.
4) Using a wooden spoon, pour eggs into bowl.
5) Pour rest of oil into wok. Add scallion and cook until you can smell them.
6) Add rice and stir until its evenly hot.
7) Add scrambled eggs to rice mixture.
8) Salt all over evenly.
9) Add soy sauce and mix evenly all over.
10) Serve on a platter
P.S. This is only the most simple way to make fried rice. You can put meat, seafood, vegetables, etc.

"Mom I'm home!" I yelled as I entered the house. But there was no reply. Then I heard "Don't come into the kitchen!" said mom. "Why not?" I asked. "Because I said so!" she replied over sounds of something frying. So I put away m backpack and took off my shoes. I waited for hours until finally...the door flew open! And there stood my mom with an apron and a bowl piled high with FRIED RICE! I started to drool on my lap as I sat on a chair and watched mom place the bowl of fried rice onto the table and then place a spoon right next to it. I began to indulge on the fried rice. In a matter of minutes I finished it with one loud gulp.
I've always loved fried rice ever since I was a baby. In fact it was the only food I used ot eat with vegetables. (Now I eat them all the time!) I love it if it was from a restaurant or if it was homemade. And because it is a simple dish that even I can make it! And it can fill up a stomach on the go. It is also one of the most well known types of Chinese food besides Chicken Lo Mein. It is always one of my most favorite Chinese foods. And I will teach it to my children and grandchildren.
