½ cup Cooking Oil
2 cups finely chopped Onion
1 cup finely chopped Green Onion
½ cup chopped Bell Pepper
1 cup chopped fresh Parsley
2 lbs. Ring Bologna or Smoked Sausage
3 cups Long Grain Rice
8 cups Chicken Stock
1 Tbsp. chopped Garlic
Salt, Pepper, & Ground Cayenne Pepper to taste

Directions:
Slice meat in ¼ inch pieces. Heat oil in large kettle over medium heat and sauté onions, bell pepper, and parsley until onions are clear. Stir in meat, rice, chicken stock, garlic, and seasonings. Continue cooking on medium heat until nearly all the liquid is gone. Cover, reduce heat to low and simmer until rice is done- about one hour. Serves 10
