3 large onions (medium dice)
2 leeks (medium dice)
2 cloves of garlic
1 tbs. kosher salt
1/2 tbs. pepper
one stem of fresh thyme (only leaves)
1 tsp. cumin
2 cups french green lentils.
3 cups carrots diced
3 cups celery diced
3 quarts chicken stock
2 tbs. red wine vinegar or red wine

Directions:
Directions:
Cook first 7 ingredients (ending with cumin) over medium heat in olive oil until tender (not browned). Take two cups of french green lentils and cover in boiling water in a bowl (from a teapot) and let sit 15 minutes. Add to the pot: carrots, celery, chicken stock and drained lentils. Cook for 2 hours. Near the end of cooking time, add 2 tbs. of red wine or red wine vinegar. Enjoy!!!
