1 pound lowfat ground beef
1 pound shredded part skim mozzarella cheese
1 pound part skim ricotta cheese
1- 28 ounce jar of sauce, preferably tomato basil or onion/garlic
grated parmesan cheese to taste
1 egg
salt and pepper to taste
1 pound lasagna noodles
1 cup mushrooms, sliced- optional
1 small onion, chopped- optional



Directions:
Directions:
Bring a large pot of water to boiling and cook noodles until tender
*If using onion, finely chop and saute
*If using mushroom, add them to sauteing onion and cook until tender
*In a separate pan, brown ground beef, until cooked through (drain if necessary), add sauce, mushrooms and onions and cook through until hot.
*Drain noodles and place in a bowl
*Place ricotta cheese in a large bowl, add egg, and salt, pepper and garlic powder to taste and mix well.

Assembly:

*Preheat oven to 375 degrees
*In a large rectangular (9x13 or 9x14) metal or glass dish we will assemble lasagna.
*Spray with Pam or brush with olive oil to prevent sticking
*Spread sauce on bottom of dish
*Lay out 3 noodles to cover bottom of dish
*Spread layer of sauce(with meat already in it), ricotta cheese, mozzarella cheese and sprinkle of parmesan
* Repeat layers of noodles, sauce, cheeses until tray almost full.
*Top layer should be noodles, sauce and mozzarella
* Loosely cover with foil and place in preheated oven and cook for 40-45 minutes.

My favorite dish is my mom's lasagna. It is a mix of cheese, pasta, sauce and meat. To eat it is sensational! My mom's tip: It tastes great reheated, so you will love it the next day as leftovers!! Can be reheated in microwave by the slice for 1:30-2 minutes.
