4 slices bacon
1 c. flour
1 c. corn meal
1/4 tsp. sugar
1 tsp. baking powder
1/2 tsp. soda
1 tsp. salt
1 lg. egg
1 c. sour milk
2 Tbsp. lard or bacon drippings

Directions:
Directions:
Dice uncooked bacon. Sift flour, measure and sift again with dry ingredients. Add egg and milk to dry mixture. Stir and add melted lard. Blend slightly until all the flour is moistened, but do not beat. Fill greased muffin pan 2/3 full. Sprinkle tops with diced bacon. Bake for 20 minutes at 400º. Then set under boiler to crisp bacon.
