1 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
3 c. oatmeal (quick cooking)
1 c. butter or margarine, softened
1 c. sugar
1 c. brown sugar
2 eggs
1 1/2 tsp. vanilla
1 c. chopped walnuts
1 1/4 c. semisweet choc. chips
(can use a little more or less chips depending on preference)

Directions:

Preheat oven to 350º. Combine flour, baking soda, salt and oatmeal and set aside. In separate mixing bowl, beat butter, sugar, brown sugar and vanilla until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in nuts and chocolate chips. Drop by teaspoonfuls onto baking sheets about 2 in. apart. Press lightly to flatten dough a little. Bake for 10 minutes or until golden brown (like regular choc. chip cookies). Remove to wire racks to cool completely.

Yee-haw! We love the name of these yummy cookies. It's an old family recipe from Massachusetts (maybe some cowboys stopped by there on vacation...)
