3 Large Zucchinis
1 Onion
2 Cloves of Garlic
Pinch of Oregano
Pinch of Salt and Pepper
4 eggs
1/2 cup of Olive Oil
1/2 cup of grated Pecorino Romano cheese
1 box of Jiffy corn muffin mix
Directions:
Directions:
Dice zucchinis and onion. Crush garlic cloves. Beat 4 eggs. In a mixing bowl, combine all ingredients from above. Grease a medium pie pan. Bake at 400 degrees for 20 min. or until golden brown
