1 pkg. Lumaconi Pasta (500g)
3 Compliments Extra Lean Mediterranean Chicken Breasts
3 tbsp. Compliments Sensations Toscano PGI Extra Virgin Olive Oil - divided
1 bunch Green Onions - sliced
3 cloves Garlic - thinly sliced
1 bunch Rapini - blanched & chopped
1 pkg. Baby Spinach
1 c. Fat Free Chicken Broth
1 pkg. Goat's Milk Cheese Crumbles - divided
3/4 c. Mozzarella Cheese - shredded & divided
1/4 c. Basil Leaves - fresh & torn
Salt & Pepper

Directions:
Prepare chicken according to package directions. Cut into strips; reserve. Preheat oven to 375ºF. Heat 1 tbsp. of the oil in a large skillet set over medium - high heat; saute onion and garlic for 1 minute. Add rapini, spinach, chicken and chicken broth; bring to a boil.
Toss cooked pasta with the sauce, half each of the goat and mozza cheeses and all the basil. Season to taste with salt and pepper.
Transfer to an 11 x 7" baking dish; sprinkle with remaining cheeses. Bake for 25 minutes or until bubbly. Drizzle with remaining oil.
