1 cup butter or margarine, softened
1 1/2 cups sugar
2 eggs
2 tsp vanilla extract
2 cups all-purpose flour
2/3 cup baking cocoa
3/4 tsp baking soda
1/2 tsp salt
confectioners' sugar

Pre-heat oven to 350 degrees.

In a mixing bowl, cream butter and sugar for 2-3 minutes. Add one egg at a time, beating well after each addition. Add vanilla. In a separate bowl, combine flour, cocoa, baking soda and salt. Gradually add to creamed mixture. Cover and refrigerate for 1 hour. Roll into 1-inch balls and place 2 inches apart on ungreased baking sheets. Bake at 350º for 8-10 minutes.

Yummy chocolate cookies with a brownie-like texture. Sometimes, we add chocolate chips but they are really good without them, too. This is Megan's favorite cookie (made with Earth's Balance instead of butter).
