1 lb. ground beef or ground turkey
1 T chopped garlic
1 onion, chopped
1 1 lb. can tomatoes, drained & cut into quarters
2 6 oz. cans tomato paste
Dried Basil & Oregano to taste
Salt & Pepper to taste

10 oz lasagna noodles, cooked and drained

3 c. lowfat Ricotta
1/2 c. grated Parmesan
2 T. dried Parsley
2 eggs, beaten
1/2 t. pepper

1 lb. Mozzarella, shredded

Directions:
Directions:
Preheat oven to 375º

1. Cook lasagna noodles according to package directions and set aside.
2. Brown ground meat, and drain off fat. In same pan, saute garlic and onion with a little olive oil if necessary.
3. Combine meat, garlic, onions with tomatoes, tomato paste, and spices to taste.
4. Mix ricotta cheese, eggs, parmesan cheese, parsley, and 1/2 t. pepper in medium bowl.
5. Spray 13x9 pan with cooking spray. Assemble lasagna, beginning with meat sauce on bottom, then lasagna noodles, then ricotta mixture, then mozzarella cheese. Continue layering, 1 or 2 more layers, finishing with meat sauce and mozzarella cheese on top.
6. Bake for 30 min. Let stand 10 min. before serving.

*** I have made variations to this basic recipe, substituting chopped chicken for the meat, or doing a vegetable lasagna with cooked spinach, mushrooms, and zucchini as well. If using vegetables, just make sure that they are cooked and drained thoroughly to prevent the lasagna from becoming too soupy.***

I love my mom's lasagna. It tastes like a mountain of pasta with rivers of tomato sauce, juicy chunks of meat and puddles of melted cheese.
My mom got the recipe from my grandma. My brothers do not like lasagna. So mom makes me a separate dish if I want.
I have lasagna at dinner. I do not have it a lot. I have it two or three times a month. So I think that my mom has the best lasagna.
