Pork Tenderloin
1 carrot
1 onion
1 clove garlic
white wine
Dijon mustard
cream
poultry seasoning
salt and pepper

Directions:
Directions:
Brown the tenderloin on all sides in olive oil. Season with poultry seasoning, salt, pepper. Add onion carrot and garlic to pan. Cover the pan and place in a 350º oven for 1 1/2 - 2 hours. When the pork is tender remove it from the pan and cover to keep warm and set aside. Place the pan on the stove top and add a tsp of mustard and some wine. Mash down the vegetables and add cream. Pour over the meat or set aside in a gravy bowl.

Sometimes it is nice to add an apple.

I like to bake white potatoes with the pork, they take on a wonderful flavor!
