Large package of egg noodles (extra wide)
6 eggs
1 1/2 cup sour cream (can use "light")
1/2 lb. cottage cheese
1 lb. cream cheese (or low-fat Neufchatel)
1/2 cup milk
1/2 cup sugar
2 tsp. vanilla
8-12 oz. apricot jam/preserves
Crushed Cornflakes, Special K, Frosted Flakes, Total or other cereal.

Directions:
Directions:
1) Cook egg noodles according to directions. Drain.
2) Have cream cheese at room temperature.
3) Beat all ingredients together except egg noodles until smooth. Add noodles and pour into 9 x 13 in. pan.
4) Top with crushed cereal. Drop apricot jam (if desired) in about 15 spots on top.
5) Bake at 350º for 1 hour.

I like my mom's kugel. I like it because it is very cheesy. It has Special K cereal. And a crust. The best part is you can add jelly. The kugel is very crispy.
