4 – 6 large potatoes, baked
1 ½ c. shredded cheddar cheese
¼ c. mayo or Miracle Whip salad dressing
¼ c. milk
1 egg
½ tsp. salt
Dash of pepper
¼ c. green onion
8 slices crispy cooked bacon, crumbled (or ham)

Directions:
Directions:
Cut baked potatoes in half lengthwise and scoop out potatoes leaving 1/8 “ shell.
Combine inside of potatoes, 1 c cheese, mayo, milk, egg, and seasonings; beat until fluffy. Add onion and bacon. Mix.

Fill shells and top with remaining cheese.

Bake at 350 degrees for 15 minutes.
