1 1/4 cup white sugar
3/4 cup oil
2 eggs
2 1/4 tsp baking powder
1 1/4 tsp baking soda
3/4 tsp salt
1 1/3 tsp cinnamon
1/4 tsp allspice
4 oz can crushed pineapple
2 cups grated carrots
4 oz chopped walnuts

Mock Cream Cheese Frosting
2 cups powdered sugar
1/2 cup margarine
1 tbsp milk + 1 1/2 tsp
1 1/3 tsp vanilla
Additional walnuts for topping

Directions:
Directions:
Cream together sugar and oil, add eggs, then dry ingredients. Fold in pineapple, carrots and walnuts.
Pour batter into a 9"X13" greased pan and bake at 325º for 30 to 35 minutes.

After cake is cool, mix frosting ingredients and spread on cake. You may add chopped walnuts for garnish on the top.

This is a prize winning recipe that I submitted for a baking contest in one of my working years. It was made at one of our food service convention that was held in Duluth that year. I did receive 1st place for it.
