1 1/2 lbs TN Pride Real Country Sausage (hot or mild...I mix them)
1- 5 1/2 oz pkg Herb-Seasoned Croutons
2 cups shredded Sharp Cheddar Cheese
2 cups shredded Pepper Jack Cheese
1/4 cup Minced Onion
8 Eggs
2 cups Half-and-Half
1 1/2 cups Milk
1 1/2 tsp dry Hot Mustard
Salt and Pepper to taste
Chopped Red and Green Peppers, for garnish

1. Cook sausage in large skillet until browned. Drain, crumble and set aside.
2. Spread croutons on bottom of lightly greased 9-by-13-inch baking dish. Cover croutons with cheddar and pepper jack cheeses. Sprinkle cooked sausage and onion over cheeses.
3. In large bowl, beat together eggs, Half-and-half, milk, mustard, salt and pepper...pour mixture evenly over sausage. Cover and refrigerate casserole for, at least, 8 hours.
4. Bake at 350º for 45-60 minutes. Insert knife in center of casserole to check if done..It should not be runny...Let stand for 20 minutes before serving. Garnish with chopped peppers.

I prepared this for our "girls weekend" at my house...good mix of pepper jack and hot sausage helped to "spice" this up a bit...
