Ingredients: Crepe's: 6 Eggs 12 tbsp. Flour 8 tsp. Sugar 1 tsp. Salt 2 c. 2% Milk 4 tbsp. Butter - melted
Filling: 1 lb. Dry Cottage Cheese 2 tbsp. Sugar 1 Onion - small in size and chopped 1 Egg 1 tsp. Salt 1 tsp. Fresh Dill - or to taste
Topping: 1 small carton Whipping Cream Fresh Dill

Directions: Filling: In large bowl, blend egg with finely chopped onion & dill. Mix in cottage cheese, sugar & salt. Set aside. Crepes: Beat eggs in large mixing bowl. Add flour, sugar & salt; mix well. Add milk & mix. Add melted butter & mix. In small non-stick skillet pour about 1/4 cup amount of batter and cook on medium heat until starts to brown on bottom (so thin it shouldn't need to be flipped) Place on clean counter (golden side down) and put tbsp. sized portion of cottage cheese mixture on one end - fold in sides and roll into mini wrap. Place into large square casserole dish. Keep cooking the crepes and filling them - layering side by side in the casserole dish. If you have extra you can start a top layer as well - just layer going the other way. Pour whipping cream on top of crepe's and sprinkle with dill. Bake at 350ºF for 20 minutes or until hot. |
