For crust:
1 Package shortbread cookies
Small jar Macadamia nuts
2 T melted butter
For filling:
3/4 C squeezed lime juice
1 tub Cool Whip
1 can Sweetened condensed cream

Directions:
Directions:
Put cookies and nuts in processor and pulse until chunks are gone. Add melted butter and pulse until blended. Pour into pie dish and press into bottom and sides to form crust. Place in preheated 400º oven for 8 - 10 minutes or until golden. Let sit to cool for at least 1 hour.

Whisk together the cream and juice and fold in the cool whip until smooth. Pour into cooled pie crust and place in freezer.

Remove from freezer 45 minutes before serving. Add mint and slice of lime to garnish.
