1 - 2 lbs Flank Steak, Sirloin, London Broil or Tri Tip
Salt & Pepper
3/4 C Fresh Parsley leaves minced
1/3 C Red Onion minced
3 Garlic Cloves minced
1/3 C Red Wine Vinegar
1/3 C Extra Virgin Olive Oil
opt: 1/8 teas Red Pepper Flakes

Directions:
Directions:
Combine Parsley, onion, garlic, vinegar, oil, and opt. red pepper flakes in a small bowl. Season steak with salt and pepper. Grill or pan fry steak over very hot fire until lighly browned on both sides. Meat should be pink but not raw. Remove steak from grill or pan. Slice steak thinly across grain, top with parsley mixture and place in foil or covered tupperware. Cover and let sit 10 mins.
