1 1/2 cups grated, raw sweet potatoes
3/4 cup orange juice
1 tsp grated orange zest
1/4 cup brown sugar
1/2 tsp salt
1/4 tsp cinnamon
1/8 tsp cloves
1/2 cup melted butter

Directions:

Preheat the oven to 350º F

Mix the ingredients well and pour into a greased casserole. Cover the dish with aluminum foil during the first 35 minutes of baking. Then turn the oven to 325º F and remove the foil. Bake for 30 minutes longer. When the pudding is done, a knife inserted in the center will come out clean.

To make this extra special for the kids, top with a layer of marshmallows during the second part of the baking.
