4 large Lobsters - live
Butter for basting

Marinade:
2 T. fresh ginger
1 egg
2/3 C. heavy cream
3 T. ginger paste
3 T. garlic paste
2 T. lemon juice
1/3 C. Gram flour (also known as chickpea flour or Besan, avail at Indian grocery stores)
2 tsp. Garam Masala
1/2 tsp. white pepper powder
Salt to taste

Boil the lobster in a large pot of hot water until bright red. Cool, de-shell and de-vein. If you wish to serve the lobster in the shell, cut in half, remove, wash the shell and keep for later use.
Finely chop ginger. Add egg, chopped ginger and remaining marinade ingredients and whisk and rub lobster with this mixture. Set aside for 2 hours.
Preheat oven to 350ºF. Skewer lobsters an inch apart. Keep a tray underneath to collect drippings.
Roast in oven for 5 minutes. Remove and hang skewers to allow excess moisture to drip off. Baste lobsters with butter and roast again for 2 minutes until meat is opaque white and slightly browned.
Serve hot in cleaned lobster shells.
