10 large eggs
1/2 C. flour
1 tsp, baking powder
1/2 tsp. salt
1 pint small curd low fat cottage cheese
16 oz. Monterey Jack cheese - grated
1/4 C. melted butter
2-4 oz.cans diced green chiles

Directions:
Directions:
Beat eggs until light in color. Mix together flour, baking powder and salt and add to eggs. Combine cottage cheese, jack cheese and melted butter. Beat until well mixed. Add diced green chiles. Preheat oven to 350ºF. Pour mixture into 9x13x2 casserole dish or souffle dish. Bake 35-40 minutes.
