1 T ground coriander
1 T ground cumin
1 t salt
2 t pepper
4 cod fillets, thawed
2 T canola oil
2 T whole grain Dijon mustard
¼ c butter
Potatoes
Cilantro sprig (for garnish)

Directions:
Directions:
Cover potatoes by 1 inch of water in large pot, bring to a boil. Simmer partially covered until potatoes are tender, about 15-18 minutes depending on size. Drain and return to pot to keep warm.

Combine spices in a small bowl. Sprinkle spice mix over Cod, coating both sides.

Heat 1 T oil in skillet over moderately high heat. Oil should be very hot, but not smoking. Sear fish until undersides are well browned, about 2 minutes. Turn fillets over and sear until just cooked 2-3 minutes more. Transfer to plate and keep warm. Wipe pan clean, heat remaining oil and add 2 T water and mustard. With wooden spoon mix together and add butter in small chunks, stirring until the sauce is warm with a creamy consistency.

Smash potatoes, serve with fish and sauce. Garnish with a cilantro sprig if desired.
