Ingredients: 1/4 to 1/2 cup sugar (I have also used 1/2 cup honey instead) 2 tablespoons cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon nutmeg 1/4 teaspoon cloves 1 tablespoon vanilla (I use pure, organic) 2 large eggs (preferably the "omega - 3" organic) 1 15 ounce can of pure pumpkin -- no sugar or additives! 1 12 ounce can Carnation skim evaporated milk

Directions: Preheat oven to 350º. Mix the dry ingredients, then wet ingredients, then mix all together gently. Pour into baking pan pre-sprayed with Pam. Bake for 30 minutes. Cool and refrigerate before serving. I like to serve topped with toasted chopped pecans or walnuts (super foods also), and sprinkled with a dash of cinnamon. |

Notes: My mother-in-law turned me on to a "super" nutrition book -- Steven G. Pratt's 14 Super Foods. I highly recommend the read! Since pumpkin is packed with phyto-nutrients and a great source of zinc, Pratt put it on his "super food" list, and recommends we don't just trot this super veggie out on Thanksgiving. I love his pumpkin pudding recipe because you can make batches in advance. It satisfies the sweet tooth, and makes you feel virtuous -- can't beat that combination!! PS Cinnamon is also considered a "super spice" so you can feel doubly virtuous and healthy with every pumpkin-y bite.
