2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
2 c. sugar
4 eggs
2 c. pumpkin
1 c. oil
chopped nuts (optional)
CREAM CHEESE FROSTING
3 oz. cream cheese (softened)
3/4 stick margarine or butter
1 tsp. milk
1 tsp. vanilla
1 3/4 c. sifted powdered sugar

Directions:
Sift dry ingredients, including sugar, into mixing bowl. Add slightly beaten eggs, pumpkin and oil. Mix together. Blend in nuts (optional). Bake in 2 greased and floured cake pans (9x13) at 350º for 25 min. Serve plain, sprinkled with powdered sugar, or spread cooled cakes with cream cheese frosting.
Frosting:
Combine cream cheese, butter, milk, vanilla, & pwd. sugar.
