1 whole chicken (3 lbs)
2 medium lemons
1/2 cup fresh squeezed lemon juice
Kosher or sea salt
fresh ground pepper

Directions:
Directions:
*Preheat oven to 400º.
*Rinse chicken -- inside cavity and outside.
*Let chicken drain, cavity side down, in colander until chicken reaches room temperature (about 15 minutes).
*Pat chicken dry with paper towels.
*Pour lemon juice over chicken, inside and outside.
*Roll the two lemons on counter to release juices.
*Prick lemons with fork, at least 3 times.
*Place two pricked lemons into chicken's cavity.
*Season chicken with salt and pepper to taste.
*Reduce oven temperature to 350º.
*Place chicken on rack, cavity side down for 15 minutes.
*Turn bird around (using two wooden spoons helps) and roast for another 35 minutes until done. I used a Perdue Oven Stuffer with thermometer.

This recipe is from Glamour Magazine, with urban legendary status. Apparently, men propose after having been served this succulent lemon chicken. I made it for my husband after twenty-five years of marriage, and he said it was by far the best chicken he's ever had, and that he would most definitely propose all over again! So, if you have any single friends out there who are hoping to "seal the deal" -- let them do it with this chicken recipe. And for all you happily married men or women out there, make this for your sweetie, and fall in love all over again!
