6 tbsp olive oil extra virgin
1 c. bacon diced 2 tsp salt
4 c. rice 1 bell pepper diced
1 jar peamento 8 oz. 1/2 c. white beans
2 cloves garlic diced 4 c. tomato juice
4 c. chicken stock

Directions:
Directions:
Heat in a 14 inch deep dutch oven, can also do it on top of stove. Put diced bacon in d.o. or pan snd cook out most of the oil but not completely done, take most of the the grease out but leave enough to grease the pan. add peppers, onion, garlic saute 2 minuets.
Add tomato juice, chicken stock, salt and boil.
Cover remove some coals of heat and simmer 20 minuets.
In seperate pans cook rice and beans with other ingredients and simmer for 15-20 minuets.Cool 5 minuets
