2 eggs, beaten
2 cups flour
2 cups milk
1/2 t. salt

Directions:

Combine ingredients in blender or mixer.
Melt and keep hot: 1/3 cup oil.
Heat skillet until medium hot. Add approximately 1 tbsp. hot fat to skillet and pou in about 1/4 cup pancake batter, tilting skillet to cover bottom of pan. Like making crepes. Turn in a minute or two when underside is browned. Remove to serving platter and keep warm. Repeat.
Serve filled with cottage cheese and cinnamon, and topped with maple syrup and fresh fruit.
Make ahead by filling with cottage cheese and putting into a oven-safe pan with a little butter and cover to keep warm in low oven. Add some bacon or sausages on the side for a full meal.
