2 cans black-eyed peas, drained
1 can shoepeg corn, drained
1 large onion, chopped
1 bunch green onions, chopped
1 small can black olives, chopped
1 medium tomato, chopped
2 jalapeņos, chopped
1/3 cup chopped fresh parsley
8-oz. Zesty Italian dressing
4 cloves garlic, minced

Toss all ingredients and let set overnight or all day.
Alternate version: 1 can black beans, 1 can black-eyed peas, 1 can shoe peg corn, 1 red pepper, 1 green pepper, 1 red onion, 1 can Rotell tomatoes, 1 tomato, Zesty Italian Dressing.
