Ingredients: 2/3 cup boiling water 1 pkg (4 serving size) Jell-O Brand Lime flavor gelatin (sugar free ok) ½ cup cold water 1 ½ tsp grated lime peel (optional, I dont like the texture with it in so I leave it out and add extra lime juice instead) 2 tbsp limejuice 2 cups thawed Cool whip 1 ready to use graham cracker crust (or individual portion crusts)

Directions:Stir boiling water into dry gelatin mix in large bowl until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until ice is mostly melted remove any left over ice chips. Stir in lime peel and juice.
Add cool whip; stir until well blended. Refrigerate 15 to 20 min or until mixture is very thick and will mound. Spoon into crust.
Refrigerate at least 4 hours or over night keep leftovers in fridge. |
