• 2/3 cup boiling water
• 1 pkg (4 serving size) Jell-O Brand Lime flavor gelatin (sugar free ok)
• ½ cup cold water
• 1 ½ tsp grated lime peel (optional, I don’t like the texture with it in so I leave it out and add extra lime juice instead)
• 2 tbsp limejuice
• 2 cups thawed Cool whip
• 1 ready to use graham cracker crust (or individual portion crusts)

Stir boiling water into dry gelatin mix in large bowl until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until ice is mostly melted remove any left over ice chips. Stir in lime peel and juice.

Add cool whip; stir until well blended. Refrigerate 15 to 20 min or until mixture is very thick and will mound. Spoon into crust.

Refrigerate at least 4 hours or over night keep leftovers in fridge.

This can be adapted to any jello, I use raspberry as well with lemon juice instead of the lime.
