"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Ingredients:
Bag of dried chili peppers.

Directions:
Directions:
Put the dried peppers into a medium hot skillet. Do not add water, oil, or anything. Continue to stir the peppers until you can see them changing color, even burning in places. BE CAREFUL NOT TO BREATHE THE ENSUING ACRID SMOKE!!!. It is helpful to have a mask or wet cloth to breathe through.

Remove the peppers from the skillet and allow them to cool off. Pulverize with mortar and pestle until a powder, or put in food processor and grind to a powder, making sure to carefully rinse either after use. Also, wash your hands carefully and don't touch your eyes or any soft tissue and seriously consider throwing away your clothes when your all done.

This pepper is fantastic on any/everything. You will become addicted to it and will eat it on pizza, macaroni and cheese, Aunt Joanne's Pedro's Special, and Thai food. The roasting of the peppers gives them an intensity and a nutty flavor that is spectacular. Also, you should keep it away from children (and pets!).

Personal Notes:
This is best to do outside because the smoke that will be generated is toxic, and possibly even lethal--but the result is totally worth it.
