3/4 c. margarine (better than butter, go figure)
1 1/2 c. sugar
1 1/2 c. mashed bananas
2 eggs well beaten
1 tsp vanilla
2 c. flour
1 tsp. soda
3/4 tsp salt
1/2 c. buttermilk
3/4 c. pecans (optional)

Directions:

Cream margarine and sugar, add bananas, eggs, vanilla. Add dry ingredients and then buttermilk and nuts if desired. Bake at 325 for 1 hour and 15 minutes for large loaf or 2 smaller loaves for less time.

I have tried many banana bread recipes and this is my favorite. My kids will eat it all in one sitting. We don't add the nuts. If I don't have buttermilk (which I never have) we add a little vinegar to regular milk and let it sit a few minutes and stir....same result.
