beef, preferably flatiron steak or flank steak
fish sauce (naam pla)
golden mountain sauce
black pepper
clove garlic
6 limes
rice powder
roasted powdered red chili powder
1 tbsp sugar

Directions:
Directions:
Make a marinate from 1/4 cup vegetable oil, 2 tbsp. fish sauce, 1 tsp. golden mountain sauce, 1 tsp black pepper, 1 tbsp crushed fresh garlic. Put the beef in a ziploc bag and pour in marinate and let set for at least four hours. Overnight is OK.

On a hot grill, sear the beef and cook until desired doneness, medium rare is preferable.

Make a dipping sauce using equal parts of lime juice and fish sauce. Add the sugar and taste. You should be able to taste salty, sweet and sour, but one should not overpower the others. Add the chili powder and rice powder to taste.

This dish can be served hot or cold on a bed of romaine lettuce and with sticky rice.

This is my signature dish that I learned from our maid in Thailand. Over time it has been modified a little. The fish sauce and golden mountain sauce is available in the Asian food section at large supermarkets, otherwise go to a Chinese market. Sticky rice (khaw niaw) is probably only available at a Asian market.
