3-4 large (not huge) potatoes shredded
3/4 cup shredded sharp cheddar cheese
3 eggs, beaten
2 Tbsp. flour
1 small can geen chilies-drained
1/2 of an onion finely chopped or grated
1/2 tsp. salt
oil fry frying

Directions:
Directions:
Shred the potatoes to measure 3 cups. Combine grated potatoes, cheese, eggs, flour, chilies, onion and salt in a large bowl. Heat a generous amount of oil on med. high in a skillet. An electric griddle works great for frying these. Drop 1/4 cup of the potato mix into the oil, gently flatten and fry until golden on both sides.
