LEWIS AND CLARK'S WHITE CHILI
1 C chopped onion
4 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons ground cumin
1 t dried oregano, crushed
1/4 t ground red pepper
1/4 t ground cloves
3 cans great northern beans, rinsed and drained
1 4/oz can diced green chili peppers or chopped jalapeņo peppers
4 C chicken stock or broth
3 C chopped cooked chicken
2 C shredded Monterey Jack cheese (8 ounces)

1. Cook onion and garlic in hot olive oil till onion is tender, but not brown. 2. Stir in cumin, oregano, ground red pepper and cloves. Cook for 2 or 3 minutes. Stir in the beans, chili peppers and chicken stock or broth. Bring to boiling; reduce the heat. Simmer, uncovered, for 5 minutes. Stir in the chicken; heat the mixture through. .3. Ladle the chili into 8 large, warm bowls. Top each serving with 1/2 C cheese.

If you want hotter add more chili peppers, this is a great alternate to red chili.
