1 Recipe pie dough for 9 inch pie

2 Tablespoons olive oil
2 Medium shallots, thinly sliced
1 Pound assorted mushrooms, cleaned and sliced
Salt and freshly ground pepper
1 Cup whole milk
3 Large eggs
6 Ounces Gruyere cheese, grated (1-1/2 cups)

Directions:
Preheat oven to 350 degrees. Place pie crust in 9 inch glass dish and poke all over with fork; bake for 8-12 minutes until lightly browned; cool slightly. For filling: heat oil in a large nonstick skillet over medium heat. Add shallots and cook, stirring until translucent, but not brown, about 1 min. Add mushrooms and season with salt and pepper. Cook, stirring frequently until mushroom liquid evaporates and mushrooms are dark golden brown (about 8 minutes). Place pie pan on baking sheet to catch any run off. Sprinkle half the cheese over crust. Spread mushrooms then top with remaining cheese. In a medium bowl, whisk together milk and eggs. Season with nutmeg, salt and pepper. Pour over cheese. Transfer to oven and bake until just set in center 30-35 minutes. Cool on wire rack 10 minutes before slicing.
