4 large potatoes
4 oz. softened cream cheese
1/4 c. light sour cream
1/2 med. onion, chopped
1 c. shredded cheddar cheese
3 oz. Bacon bits
1/4 tsp. salt
1/2 c. skim milk, scalded
1 (1 oz. pkg) Ranch dressing mix
4 green onions, finely chopped

Wash and pierce potatoes with a fork. Microwave on high for 10 minutes. Set aside to cool.
Preheat oven to 350. Grease 11 x 7 inch pan
Combine cream cheese & sour cream; beat until smooth. Add onion, 1/2 the cheddar cheese, 1/2 of the bacon bits and salt. Mix well. Cut potatoes in half and scoop out the insides. Add to the cream cheese mixture and mix well. Stir in the milk and add the Ranch dressing. Spread the potato mixture into the pan. Bake, uncovered for 30 minutes. Remove from oven and sprinkle with remaining bacon bits and green onions. Bake 5 minutes longer.
