3 tbsp olive oil
3 garlic cloves crushed
2 lb pork loin or tenderloin cut and pounded into thin slices
(about 1/16 inch thick)
1 tsp rosemary, whole leaves crushed
1/2 cup white wine
1/2 cup gorgonzola or blue cheese crumbled
1/4 cup cream or half and half
salt and pepper to taste

Directions:

Heat a large frying pan and add oil and garlic.
Brown meat slices quickly on both sides (about 3 min per side)
Do this in two batches so you don't overcook the meat
Remove to a warm serving platter
Add rosemary to pan then deglaze with wine, scraping up the
brown bits with a wooden spoon
Add cheese and cream, salt and pepper
Bring to a quick simmer and allow cheese to melt into wine.
Pour sauce over meat and serve
