1 1/2 c. flour
1 1/2 c. old fashioned oatmeal
1/2 tsp. baking soda
2 sticks unsalted butter softened
1/4 c. sugar
1 c. brown sugar
1 tsp. salt
1 tsp. pure vanilla extract
2 large eggs
8 oz white chocolate chopped
7 oz dried apricots chopped (1 1/2 c.)

Directions:
Directions:
Preheat oven to 350º. Mix flour, oatmeal, and baking soda. Cream btter adn sugars in a mixer until light and fluffy. Add salt, vanilla, and eggs. Add flour mixture gradually. Stir in apricots and chocolate. Cover and chill about 30 min. Drop heaping T. of dough onto cookie sheet 2 in apart. Bake until golden brown around edges, 14-16 min.
