2-2 1/2 lb. Chicken (Edie uses boneless breasts)
1/4 c. Flour
1 1/4 tsp. Salt
1/4 tsp. Pepper
3 tbsp. Shortening
1 can Tomatoes (cut up)
1/3 c. Heinz 57 Sauce
1/3 c. Grated Parmesan Cheese
1/4 tsp. Oregano
1/4 lb. Sliced mozzarella Cheese

Directions:
Directions:
Coat chicken with mixture of flour, salt & pepper (add additional spices that you like). Brown in shortening. Place chicken in baking dish (12x8x2). Blend remaining flour mixture with tomatoes & next 4 ingredients. Pour over chicken, cover & bake at 350º for 30 minutes. remove cover, top with cheese slices & bake uncovered for another 25 - 30 minutes. Skim excess fat from sauce.
