Pastry: Make your favorite pastry recipe using 5 cups of flour.

The Pie:
2 quarts oysters.
1 1/2 dozen eggs - hard cooked.
2 lb. potatoes - sliced and boiled until almost soft.
1/2 lb. butter.

The Oyster Sauce:
1 Pint of Milk.
1 can of oyster stew (optional).
Butter.
Cornstarch or flour.
4 diced hard cooked eggs (from above).
Parsley.
Salt.

The Pie:
Line 9x12 inch deep baking pan with pastry.
Drain oysters, reserving liquid.
Place layer of oysters in pan, layer of sliced hard cooked eggs, layer of sliced cooked potatoes.
Dot with butter and cover with top crust.
Bake in 400 degree oven until nicely browned (30 - 45 minutes)
Serve with Oyster sauce in gravy boat.

Oyster Sauce:
Place reserved oyster liquid in sauce pan.
Add 1 pint milk and can of oyster stew (optional).
Add butter.
Heat stirring constantly.
Thicken with cornstarch or flour.
When ready to serve add 4 diced hard cooked eggs, parsley, salt to taste.

Makes enough for eight generous helpings of oyster pie.

This is Grandma's Woodside original recipe and we love it!! I make a smaller version just cut back on ingredients and used a normal size pie pan. I also did not use the oyster stew which is optional in the oyster sauce.
