4-5 medium squash-sliced

1 Vidalia or Spanish onion-chopped
salt and pepper to taste
1/2 stick butter
12 oz. Cheddar cheese-shredded
2 eggs beaten
1/2 sleeve Ritz crackers=crushed
1/2 stick butter melted

Directions:
Directions:
1 Saute squash and onion in butter with
salt and pepper until squash is transparent..
2 Mash squash slightly with spatula..
3 pour small amount liquid from step 1 into
bottom of casserole dish.
4 Mix remainders of squash mix with
eggs, Cheese. Pour into casserole dish
5. Mix throughly crackers with melted butter, cover top of squash mix.
6. Bake 350 for 30 min. uncovered.
