1 1/2 lbs. ground beef
1 med onion, chopped
1 (10-oz.) can green chili salsa or tomatoes and green chilies
1 (7-oz.) can green chilies, chopped
1 (14 1/2 -oz.) can stewed tomatoes
1 (17-oz.) can refried beans
Salt and pepper to taste
2 dozen large flour tortillas
2 c. mild cheddar cheese, shredded
1 c. sour cream

Directions:

Brown beef and crumble with fork. Drain. Add onion, green chili salsa, chilies, salt, pepper, tomatoes, and beans. Cook and stir 5 minutes or until most of the moisture is cooked away. Heat tortillas in oven to warm (not crisp). Fill each tortilla with some meat mixture, 2 tablespoons shredded cheese and 1 tablespoon sour cream. Roll tortillas around filling and serve immediately. Burritos may be cooled, wrapped in foil and refrigerated or frozen.
