6 slices bacon, finely chopped
1 clove garlic, finely chopped
1 small onion, finely chopped
1 1/2 lb. mushrooms, cleaned & quartered
1 tsp lemon juice
2 Tbsp dry bread crumbs
1/2 tsp salt
1/4 tsp blackpepper
1 Tbsp finely chopped parsley

Cook bacon in a large skillet over low heat until crisp, about 20 minutes. Drain bacon on paper towels. Discard all but 3 Tbsp of bacon fat. Add garlic and onion to skillet; cook over medium heat until slightly soft, about 1 minute. Add mushrooms, lemon juice, bread crumbs, salt and pepper. Cook, stirring constantly until mushrooms are slightly tender but not limp, about 3 minutes. Stir in bacon. Transfer to hot serving dish; sprinkle with parsley.
