3 pounds red new potatoes
1/4 cup Zatarain's Crab Boil (dry form NOT liquid)
1/2 cup butter at room temperature
1/2 cup cheese
1/3 cup bacon bits
1/3 cup slice green onions
3/4 tsp Tony's Chachere's The Original Creole Seasoning
3/4 tsp granulated garlic
Optional - 1/2 cup sour cream

Directions:
Directions:
Bring 4 quarts of water to boil and add the crab boil mix until blended.

Cut potatoes in half and slice 1/4 inch thick. This can be done ahead of time if you cover the potatoes with ice water.

Add potatoes (drained if done ahead) to boiling water mixture. Return to a boil and cook 10 minutes or until potatoes fork tender. Drain off liquid and add remaining ingredients while the potatoes are hot. Combine ingredients trying not to break up the potatoes excessively. Check seasonings and adjust to taste.

Quantities of butter, cheese, bacon bits, green onions and sour cream can be adjusted to individual tastte.
