2 lbs lean ground beef
1 clove garlic, leave whole
1 large onion, chopped
1-1/4 c rice (we prefer Texmati)
1 can French onion soup
4 oz can of mushrooms
2-3 T curry powder
2 beef bouillon cubes dissolved in warm water
4-1/2 cups liquid that includes the soup, liquid from mushrooms, bouillon water and about 3 cups water.

In a large pot, brown the beef with the garlic. Add all the other ingredients and stir to combine. Cook covered for 45-60 minutes under medium low heat, stirring occasionally to insure that nothing sticks to the bottom.

Serve with a dollop of sour cream and some Kings Hawaiian Bread.

This is the dish Bonnie Howard’s great-grandmother and namesake, Tut Thrash, made the first time her mother took her then boyfriend, now husband, to visit. Needless to say, it was a hit. Bonnie’s dad asks to have it for him all the time, which we do, because it’s so easy. To this day we’re still not sure why it’s called “Hawaiian” casserole!
