3 lb. boneless pork loin roast
1 c maple syrup
5 T Dijon mustard
3 T cider vinegar
3 T soy sauce
salt to taste
1 t black pepper

Directions:
Directions:
Preheat oven to 350
Combine all ingredients. Place pork into a roasting pan. Spread glaze over the pork roast. Roast uncovered for approx. 1 hour or until meat reaches 160º. Remove from oven and let rest for 15 minutes before slicing.
