4 lg. bell peppers, coarsely chopped
1/2 c. red onion, finely chopped
1 med. potato, peeled and finely chopped
1 stick butter
1/2 tsp. coarse salt
1/4 tsp. fresh ground pepper
1 qt. buttermilk

Directions:
Directions:
Saute bell pepper, onion and potato in butter until tender. Add salt and pepper. Cool slightly, then puree in a food processor until smooth. Combine with buttermilk in a sauce pan and heat until hot. Do not boil.

This tangy soup will take on the color of the peppers used. Choose red, yellow, orange or green peppers to obtain desired color of soup.
