1 1/2 cups flour
1/2 cup wheat bran
1/3 cup white sugar or splenda
1/4 cup ground flaxseed or flaxmeal
1 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1 1/2 cups mashed ripe bananas
/4 cup plain yogurt
2 eggs
2 tsp butter melted
2 tsp vanilla
1/2 cup finely chopped or ground walnuts or pecans
1/3 cup mini chocolate chips

Directions:

Inn a large bowl, combine flour, wheat bran, sugar, flax, baking soda, baking powder, cinnamon and salt. In a medium bowl whisk together bananas, yogurt, eggs, butter and vanilla. Add wet ingredients to dry and stir just until moistened. Fold in nuts and chocolate chips, being careful not to overmix the batter. Spoon batter into a lightly sprayed 9 x 5 inch loaf pan. Bake at 350º for about 50 minutes or until a skewer insert4d in center of loaf comes out clean. Cool loaf for 10 minutes. Remove from pan and cool completely on a wire rack. Store tightly covered with saran wrap at room temp. until ready to serve.
