4 eggs, slightly beaten
1/2 c. sugar
1/4 tsp. salt
1/2 tsp. vanilla
2 1/2 c. milk, scalded
1 9-inch unbaked pastry shell
a pinch of ground nutmeg or cinnamon

Directions:
Directions:
Blend eggs, sugar, salt and vanilla. Gradually stir in scalded milk. (To scald the milk, heat milk on medium - watching it carefully. When a film begins to form on the top of the milk, it is scalded. Watch for small bubbles.) Pour into pastry shell. Sprinkle with nutmeg or cinnamon. Bake in moderate oven 350º for 35 to 40 minutes, or until knife inserted halfway between center and edge comes out clean. Cool on rack, chill.
