2 small or 1 large heads of escarole
6 cloves of garlic - chopped
1 box (48 ounce) chicken broth
2 cans cannelloni beans
1 can Italian whole tomatoes - use only 4 of the plum tomatoes (swish by hand)
crushed red pepper
salt and pepper

Directions:

Drain and wash cannelloni beans

Escarole - cut off ends and cut into large pieces

In a large pot, saute chopped garlic in olive oil, add tomatoes, s&p and red pepper - when hot add escarole and keep stirring over medium heat. Add cannelloni beans and chicken broth - bring to a boil and then perk until escarole is soft.
